Recipe
1/3 cup coconut oil softened
4 tablespoons keto confectioners sugar (Bocha sweet)
1/2 cup sweet potato puree
1 cup coconut milk
2 pastured eggs
2 cups blanched almond flour
3 tablespoons coconut flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon vanilla
1/2 teaspoon salt
Start by creaming the wet ingredients together, add the dry ingredients once incorporated. Mix well. Pour batter into a greased or preferability unbleached parchment lined 8″ pan and spread evenly. Sprinkle cinnamon on the top or incorporate into the batter.
Bake at 350° for 45 minutes or until browning occurs. Make sure it is ready to serve by testing the inside of the blondies by sticking a fork through the batter on the pan, if nothing is on fork then it is ready to be served!
